Dairy-free Vege Filo Pie-lettes or Scrolls (Pita/Gibanica)

A Balkan favourite re-purposed for a dairy-free client.


How is this possible? Is this allowed? Blasphemy! Noooo way. Never judge until you try to walk in someone else’s shoes or delight in newfound tastebuds or dietary needs.


As with all our recipes, this is a base idea which is completely adaptable and buildable to your taste and needs.


So let’s cut to the taste, I mean, chase…


Preheat oven to 180°C

Oil a small, square baking dish


Makes 4 Large Pita/Scrolls


+ 8 sheets Filo Pastry


+ Mix:

3 Eggs

1/4 Cup Nut Milk

2 T sparkling or soda water

1-2 t pink salt

Optional: Can add a T or 2 of nutritional yeast for ‘cheesier’ flavour


+ Grate and add to egg mixture:

1/2 large zucchini


+ Finely chop and add to egg mixture:

1 small leek (approx. 1 cup)


+ Spread mix across filo.


+ Grab 2 sheets and roll into log, slightly tucking the ends as you do.


+ Take one end and wind in, creating a scroll. Pop into prepared dish. Repeat until you have 4 fitting snuggly in there.


+ Sprinkle top with oil and salt


+ Bake for 20 minutes or until beautifully crispy and golden on top.

Cauliflower (finely chopped)

Cabbage (grated)

Potatoes (grated)
