Speedy Gonzales Chicken Enchiladas

A super quick, easy and delicious dinner






Here we have an absolute foundation recipe for a quick and easy Mexican feast. The opportunities to vary and customise to really make this your own are limitless - as every recipe should be! Add your own special herbs and spices. Vary the proteins. Here we have the quick chick version but of course you can make this with beans, beef, veal, pork, lamb even fish! Leftovers too (as long as you don't have any histamine or mast cell issues - call us if you need more info).

We really do mean it when we say quick, easy and delicious. Nothing worse than wasting even 10 minutes of your precious time to produce something disappointing.


Ready. Set. GO.....Ariba ariba andale andale yayayayayayaaaa.....



Speedy Gonzales Chicken Enchiladas


Ingredients:

6-8 Large Wraps

Jar of Pasta Sauce

1-2 Cups Grated Tasty Cheese

1 BBQ Chicken

Optional but wonderful: handful of Baby Spinach (4-6 per wrap)

Optional flavours to add:

Cumin powder

Paprika powder

Chilli - fresh or dried

Coriander, parsley &/or basil

Extra garlic


Accompaniments:

Sour Cream, Guacamole / Avocado slices, Salad &/or Salsa but don't stop here!! Make it yours!!





Directions:

  • Grease a large rectangle baking dish with oil of your health and taste preference and pre-heat oven to 180 degrees celcius.

  • Pull out most of the 2 chicken breasts and some of the red meat (thigh) if you like it a bit richer. Chop or break up the chicken straight into a bowl.

  • Add 2/3 of the pasta sauce.

  • Add any spices or herbs you might like. Mix all together.

  • Into middle line of the wrap, add the mixture as you would to make a burrito (2-3 tablespoons), sprinkle some grated cheese. This is also a great place to 'hide' your optional baby spinach leaves. Just a few.

  • Roll and pop into the baking tray. Repeat until you have a nice snug row of rolls.


  • Spread remaining pasta sauce on top, sprinkle with cheese.

  • Bake for 10-15 minutes or until cheese is melted and golden.

  • Serve with some fresh herbs, sour cream, guacamole/avocado, salsa &/or some salad on the side.
